A wine of finesse and elegance, its fine bubbles come from a second fermentation in the bottle using the traditional method. It rests for an average of 24 months in the cool shade of our cellars where it acquires a special bouquet that will seduce you.
Traditional method. The grapes are harvested at very good maturity, in order to obtain a balanced sugar/acidity ratio. After clarification of the musts, the Chenin and Chardonnay grape varieties are vinified separately, so that each one keeps its typicity during the alcoholic fermentation. This is done at low temperature (16°/17°) and takes place very slowly, which allows the aromas of each variety to be preserved.
After tasting, these two vintages are blended in varying proportions according to the liveliness of the Chenin and the roundness of the Chardonnay. Bottling generally takes place in May.
Its fine mousse comes from a second fermentation in the bottle, after which it rests for an average of 24 months on fine lees (lattes) in the cool shade of our cellars.
Serve chilled.
These Fines Bulles are perfect as an aperitif, with shellfish and raw fish starters, or for dessert.

Guide commentary: "A fresh and well-balanced brut, which combines Chenin and Chardonnay. The ripe fruit aromas are accompanied by buttery notes and a touch of toast when aired. The palate has a good balance between sugar and acidity. The finish is lively, with citrus and a slight bitterness."
